Paneer Capsicum Masala
- 15 Whole Cashew Nuts
- 3 teaspoons Oil
- 1 pinch Cumin Seeds
- 1 Red Onion, Chopped Fine
- 2 Tomatoes, Finely Chopped
- 1/2 cups Bell Pepper, Cubed
- 1 teaspoon Red Chili Powder
- 1 teaspoon Teaspoon Garam Masala Powder
- 1 teaspoon Coriander Powder
- 1 cup Water
- Salt To Taste
- 3/4 cups Paneer, Cubed
- Crushed Kasuri Methi, For Garnish
- 1. Soak cashews in water for 20 minutes. Grind to a smooth paste.
- 2. Heat oil in a kadai and throw in cumin seeds. Once cumin is browned, add onions and saute till they turn pinkish.
- 3. Add the tomato and saute till cooked and mushy. Add the green bell pepper cubes and saute for 3-5 minutes.
- 4. Add chili powder, garam masala, coriander powder and mix well.
- 5. Add water and salt. Bring to a boil. Add the cashew paste and mix well. Let cook for 5 minutes.
- 6. Add the cubed paneer and continue to cook till it reaches gravy consistency.
- 7. Garnish with crushed kasuri methi and serve hot.
