Peachy-Clean Cobbler!
- 4 cups Sliced Fresh Peaches (frozen Also Works)
- 1 Tablespoon Lemon Juice
- 1 Tablespoon Vanilla
- 3 Tablespoons Arrowroot
- 1-1/2 cup Almond Meal (almond Flour)
- 1/4 cups Melted Vegan Butter
- 1/4 cups Date Syrup Or Agave
- 1/2 teaspoons Sea Salt
- 1. Preheat oven to 350 F. Place peach slices in a large bowl. Sprinkle them with lemon juice, vanilla and arrowroot. Toss to incorporate.
- 2. Place peach mixture in a 3-quart baking dish.
- 3. In a separate bowl, mix together almond flour, melted butter, date syrup (or agave) and sea salt. After thoroughly mixed, crumble the mixture over the peach mixture. Cover dish with a sheet of foil.
- 4. Bake at 350 F for 45 minutes, until peach juice is bubbling.
- 5. Remove cover and bake a few more minutes if topping is not yet browned. Serve!
