Spice Cake
- 3/4 cups Shortening
- 1 cup White Sugar
- 3/4 cups Dark Brown Sugar
- 3 whole Eggs
- 2-1/4 cups Unbleached Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Salt
- 3/4 teaspoons Baking Soda
- 1 teaspoon Cinnamon
- 1 teaspoon Ground Cloves
- 1 cup Milk
- _____
- FOR THE ICING:
- 1-1/2 cup Confectionary Sugar
- 1/4 cups Water
- Preheat oven to 350u0b0.
- Grease and flour a 33 x 23 x 5 cm pan.
- Cream together shortening, brown and white sugars, and eggs.
- Sift together the dry ingredients.
- Alternate adding dry ingredients with milk into the creamed mixture. Don't overmix.
- Bake for 35 minutes. Test with a toothpick. If the toothpick comes out clean, it is done.
- Poke holes with a fork all over the top of the cooled cake.
- Mix the icing ingredients (I'm guessing on the measurements for the icing-I usually eyeball it). It should be pretty runny so that it goes into the cake.
- Dribble the mixture of confectionery sugar and water on top of the cake. Enjoy!
