Spiced Apple Pancakes
- FOR THE APPLE MIXTURE:
- 1/4 Tablespoons Butter
- 2 Apples
- 1 Tablespoon Apple Pie Spice
- 1 teaspoon Cinnamon
- FOR THE PANCAKE BATTER:
- 1-1/2 cup All-purpose Flour
- 3-1/2 teaspoons Baking Powder
- 1 teaspoon Salt
- 1 Tablespoon Sugar
- 1-1/4 cup Milk
- 1 Egg
- 3 Tablespoons Butter, Melted
- For the apple mixture:
- Melt butter in skillet over medium heat; add apples, apple pie spice, and cinnamon. Saute for 5-10 minutes or until apples are tender. Remove from heat and set aside.
- For the pancakes:
- In a large bowl, sift together flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Add the apple mixture to the pancake batter, mixing until combined.
- Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
