Chow-Chow Relish
- 1 1/2 c. chopped green tomatoes
- 4 c. chopped cabbage
- 2 c. chopped onions
- 2 c. sweet red pepper, chopped and seeds removed
- 1/2 c. pickling salt
- 3 Tbsp. mustard seed
- 2 Tbsp. celery seed
- 1 Tbsp. pickling spice
- 1 tsp. turmeric
- 1 1/2 c. sugar
- 4 c. vinegar
- 9 c. water
- Mix vegetables together.
- Dissolve salt in 8 cups of water and pour over vegetables.
- Let stand in cool place overnight, then drain.
- If too salty, rinse and drain again.
- Tie spices in cheesecloth.
- Add to vinegar and 1 cup water.
- Let simmer 5 minutes.
- Add sugar; stir until dissolved.
- Add vegetables and simmer for 15 minutes.
- Bring to a boil and pack boiling ingredients in hot jars and seal.
