Double Chip Cowboy Cookies With Nuts And Coconut
- 2 cups Old Fashioned Oats
- 2 cups Flour
- 3/4 teaspoons Baking Soda
- 3/4 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 1/2 teaspoons Cinnamon
- 2 sticks Unsalted Butter, Softened
- 1 cup Brown Sugar
- 2/3 cups White Sugar
- 2 whole Eggs, Room Temperature
- 1 teaspoon Vanilla Extract
- 1 cup Milk Chocolate Chips
- 2 cups Semi-Sweet Chocolate Chips
- 1 cup Shredded Coconut
- 1/2 cups Walnuts, Chopped
- 1/2 cups Pecans, Chopped
- Preheat oven to 350 degrees. In a large bowl, stir together the oats, flour, baking soda, baking powder, salt and cinnamon. In the bowl of a mixer, blend the butter and sugars until smooth. Add the eggs and beat until fluffy. Blend in vanilla. Gradually add the flour mixture to the butter mixture. Add chocolate chips, coconut, and chopped nuts.
- Line a baking sheet with parchment. Drop dough by tablespoonfuls onto the baking sheet about 2 inches apart, and bake for 10-12 minutes until lightly browned on the edges. Let cookies sit on the baking sheet for a minute to cool. Remove to a wire rack to cool.
