Nanna Doobee’S Banana Cake
- 1/2 cups Margarine
- 1-1/4 cup Sugar
- 2 whole Large Eggs
- 1/4 cups Milk
- 1 teaspoon Vanilla Essence
- 2 cups Self-Rising Flour
- 1 teaspoon Mixed Spice
- 1 teaspoon Baking Powder
- 1 cup Mashed Banana
- According to my Nanna, you must first cream the butter and sugar with a hand mixer. Then add the eggs, milk and vanilla and beat in. After doing so, add the dry ingredients and mix, before folding the mashed banana into the batter.
- Bake this at 180 degrees Celsius for 40 minutes.
- Note: This recipe is so fantastic, and I am so lazy, that I have very often just thrown everything into the bowl together and mixed it in well with my mixer. It comes out perfect every time! In fact, my other half loves this cake - and he hates bananas with a passion. Maybe I should rename it Miracle Cake.
