Spiced Up Sweet Potato Biscuits With Maple Glaze

  1. 1. Combine dry ingredients in large bowl. Mix well.
  2. 2. Mash sweet potato with olive oil and maple syrup in a separate bowl and set aside.
  3. 3. Add buttermilk to dry ingredients. Spoon in the mashed sweet potato. Stir with a spoon or fold in with hands until a ball of dough forms. If dough is too sticky, add more flour.
  4. 4. Place ball of dough on a floured surface. Knead by hand and press out dough with fingers.
  5. 5. Using a biscuit cutter or glass, cut out biscuits and transfer to parchment paper or greased cookie sheet.
  6. 6. For the glaze, warm the maple syrup and butter spread in the microwave and stir together until well combined.
  7. 7. Brush a light glaze onto each biscuit. (If you have leftovers, they work well as a dipping sauce.)
  8. 8. Bake at 400u0b0F for 15-20 minutes or until biscuits start to turn brown.
  9. 9. Allow at least 5 minutes to cool before serving.
  10. 10. Store biscuits in an airtight container.
