Spiced Up Sweet Potato Biscuits With Maple Glaze
- FOR THE BISCUITS:
- 3 cups Whole Wheat Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Garlic Powder
- 1 teaspoon Black Pepper
- 1 teaspoon Salt
- 1 Medium Sweet Potato, Cooked
- 2 Tablespoons Olive Oil
- 2 Tablespoons Maple Syrup
- 1 cup Non-fat Buttermilk, Warm
- FOR THE GLAZE:
- 3 Tablespoons Maple Syrup
- 1 Tablespoon Butter Spread
- 1. Combine dry ingredients in large bowl. Mix well.
- 2. Mash sweet potato with olive oil and maple syrup in a separate bowl and set aside.
- 3. Add buttermilk to dry ingredients. Spoon in the mashed sweet potato. Stir with a spoon or fold in with hands until a ball of dough forms. If dough is too sticky, add more flour.
- 4. Place ball of dough on a floured surface. Knead by hand and press out dough with fingers.
- 5. Using a biscuit cutter or glass, cut out biscuits and transfer to parchment paper or greased cookie sheet.
- 6. For the glaze, warm the maple syrup and butter spread in the microwave and stir together until well combined.
- 7. Brush a light glaze onto each biscuit. (If you have leftovers, they work well as a dipping sauce.)
- 8. Bake at 400u0b0F for 15-20 minutes or until biscuits start to turn brown.
- 9. Allow at least 5 minutes to cool before serving.
- 10. Store biscuits in an airtight container.
