Glazed Apple Oatmeal Cookies
- 2-3/4 cups Old Fashioned Oats
- 1-1/4 cup All-purpose Flour
- 1-1/2 teaspoon Apple Pie Spice
- 1/2 teaspoons Salt
- 1/4 teaspoons Baking Soda
- 3/4 cups Butter, Softened
- 1-1/4 cup Brown Sugar, Firmly Packed
- 1 Egg
- 1/4 cups Plus 2 Tablespoons Milk
- 2 teaspoons Vanilla Extract
- 1 cup Diced Apple (for 1 Cup You'll Need About 2 Apples)
- 1-1/2 cup Confectioners Sugar
- Preheat oven to 350 F. Line 2 baking trays with a Silpat mat or parchment paper. Set aside.
- In a medium bowl, mix together the oats, flour, apple pie spice, salt and baking soda. Set aside.
- In a large bowl, cream together the butter and brown sugar with a hand mixer until fluffy. Beat in egg, 1/4 cup milk and vanilla. Gently fold in apples and oat mixture until combined.
- Drop spoonfuls onto the prepared baking trays spacing them two inches apart.
- Bake for 15-18 minutes, or until golden brown. Remove from oven and let cookies cool for 5 minutes, then move cookies to wire racks to cool completely.
- While cookies are cooling, prepare glaze. In a small bowl, whisk together the confectioners' sugar and remaining 2 tablespoons milk. Drizzle over the cooled cookies. Enjoy!
