Banana Nut Bread
- 1/2 c. shortening
- 1 c. sugar
- 2 eggs, beaten
- 2 tsp. vanilla
- 2 c. flour
- 1/2 tsp. baking powder
- 3/4 tsp. salt
- 3/4 tsp. baking soda
- 1/4 tsp. nutmeg
- 1 tsp. cinnamon
- 1/4 c. sour milk (milk plus 1 Tbsp. lemon juice)
- 1 c. mashed, ripe bananas
- 1 c. pecans, chopped
- Preheat oven to 325u0b0.
- Combine flour, baking powder, salt, baking soda and spices; set aside.
- In separate bowl, combine sour milk (lemon juice should make the milk curdle), mashed bananas and nuts; set aside.
- Now cream together the shortening and sugar. Add eggs and vanilla; mix well.
- Alternately add dry ingredients and sour milk mixture to the creamed mixture; mix well.
- Pour batter into greased and floured loaf pans (2).
- Bake 45 to 50 minutes.
