Jerusalem Artichoke Soup
- 1 pound Jerusalem Artichokes
- 1/2 pounds Sweet Potatoes
- 1 Large Onion
- 1/2 teaspoons (smoked) Paprika Powder
- 2 cups Vegetable Stock
- Salt And Pepper
- 3/4 cups Heavy Cream
- Creme Fraiche & Fresh Parsley To Garnish
- Peel the artichokes, sweet potatoes and onion and cut them into pieces Place all the ingredients except the cream and garnishes into your Philips Soup Maker and choose the blended soup program. Or, place all the ingredients except cream and garnishes into a pot and cook over medium heat until the vegetables are soft, about 30-40 minutes. Then mix with a hand blender until you reach your desired consistency. After the soup is blended, add the cream and give a quick stir. Serve! Add a little creme fraiche and parsley on top of every bowl
