Smashed Sweet Potato Bake
- 4 whole Sweet Potatoes (Washed, Do Not Peel)
- 4 Tablespoons Sweet Cream Butter, Softened
- 2 Tablespoons Brown Sugar
- 1 Tablespoon Granulated Sugar
- 1-1/2 teaspoon Cinnamon
- 1/3 cups Mini Marshmallows
- Preheat oven to 425 F.
- Use a fork and poke the potatoes several times. Place them on a 9 x 12 non-stick sheet pan (or grease a sheet pan with your favorite cooking spray) and put pan into the oven. Bake for 40 minutes (while they bake, you can make the filling-see below). Remove from oven. Using a fork or toothpick check to make sure they are tender.
- Reduce oven temp to 375 F. Set potatoes on a clean work surface to cool down. Cut each sweet potato in half lengthwise and use the back of a tablespoon to smash the potato halves.
- For the filling: While sweet potatoes are baking grab a small mixing bowl. Add butter, brown sugar, granulated sugar, cinnamon and mini marshmallows and stir to combine.
- Using a large spoon add the filling into the center of each smashed sweet potato (be generous). Return them to the baking sheet. Put pan into the 375 F oven and allow them to bake for 8-10 more minutes.
- Remove from oven and serve immediately. We love these with ham or pork main courses. Enjoy!
