Spicy Cashew Brittle
- 2 cups White Sugar
- 1/2 cups Light Corn Syrup
- 4 Tablespoons Butter
- 1 teaspoon Cayenne Pepper (can Be Omitted)
- 1 teaspoon Salt
- 1 teaspoon Baking Soda
- 2 cups Cashews (or Other Nut)
- Line a baking sheet with parchment paper or spray well with cooking spray.
- In a large heavy-bottomed pot, combine sugar, corn syrup, butter, cayenne (optional) and salt. Heat over medium heat, stirring occasionally until sugar dissolves.
- Insert a candy thermometer and heat until thermometer reaches 300u0b0F. Do not stir during this time.
- When candy thermometer reaches 300u0b0F, remove from heat and sprinkle baking soda over mixture. Stir will to incorporate. (Mixture will bubble and foam.) Stir in nuts.
- Immediately pour onto the baking sheet and spread evenly. (You can use a metal knife sprayed with a little cooking spray, or a silicone spatula.) Let cool completely and break into pieces.
