Broccoli Oatmeal Breakfast Casserole
- 1-1/2 cup Broccoli Florets
- 2 cups Dry Quick Cooking Oats
- 1/2 teaspoons Cayenne Pepper
- 2 teaspoons Baking Powder
- 3/4 teaspoons Salt
- 4 whole Eggs
- 1 Tablespoon Olive Oil
- 3 Tablespoons Low Fat Milk
- 1. Preheat oven to 350 F. Prepare an 8-inch square baking dish by spraying it with cooking spray.
- 2. Grind the broccoli in a food processor then combine it with all the dry ingredients (oats through salt) in a mixing bowl.
- 3. In another bowl combine all the wet ingredients.
- 4. Pour the wet ingredients into the dry ingredients and mix well.
- 5. Spoon the batter into the baking dish, smooth the top and put it in the oven.
- 6. Bake for 25-30 minutes or until a fork inserted into the center comes out clean. Remove from oven.
- 7. Cut into desired size and serve hot with ketchup.
