Amaretto Pancakes

  1. Heat griddle or skillet while mixing the above ingredients. Melt a couple of pats of butter on the griddle and pour out pancakes, about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom. Turn and brown the other side.
  2. My kiddos love these topped with whipped cream and berries. I prefer them with warm maple syrup and a side of artery-clogging breakfast meat.
  3. For a Bisquick substitute (1 cup), mix:
  4. 1 cup flour
  5. 1 1/2 teaspoons baking powder
  6. 1/4 teaspoon salt
  7. 1 tablespoon Crisco
