Amaretto Pancakes
- 2 cups Bisquick (Homemade Substitute Included Below)
- 1 teaspoon Baking Powder
- 1 cup Milk
- 2 whole Eggs
- 1 teaspoon Vanilla Extract
- 1 teaspoon Almond Extract
- 2 dashes Cinnamon
- Butter, For The Griddle
- Heat griddle or skillet while mixing the above ingredients. Melt a couple of pats of butter on the griddle and pour out pancakes, about 1/4 cup of batter for each pancake. Cook until bubbly, a little dry around the edges, and lightly browned on the bottom. Turn and brown the other side.
- My kiddos love these topped with whipped cream and berries. I prefer them with warm maple syrup and a side of artery-clogging breakfast meat.
- For a Bisquick substitute (1 cup), mix:
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 tablespoon Crisco
