Cotija, Mushroom, Green Chili Omelet
- 1 Tablespoon Olive Oil (or Cooking Spray)
- 1/2 cups Slice Mushrooms
- 2 cloves Garlic
- 4 whole Eggs
- 2 ounces, weight Cotija Cheese (add More Or Less According To Taste)
- 2 Tablespoons Fire Roasted Green Chili (I Use Mild In A Can)
- 1 pinch Salt And Pepper, to taste

- FOR GARNISH (optional):
- 4 Tablespoons Sour Cream, Or More To Taste
- 4 Tablespoons Salsa, Or More To Taste
- Coat pan in olive oil or cooking spray.
- Saute mushrooms and garlic until cooked.
- Add eggs to the pan with mushrooms and garlic, and cook until eggs are almost cooked. Then add as much cotija cheese as you would like. Season with salt and pepper, to taste.
- You can cook the chilies in with the mushrooms or add as a topping.
- Garnish with salsa and sour cream (optional).
