Honey And Flaxseed Bread(For The Bread Machine)
- 1 cup plus 2 tablespoons water
- 1 1/2 tablespoons flaxseed or canola oil
- 3 tablespoons honey
- 1/2 teaspoon lecithin (can use either liquid or dry granules form)
- 3 cups (14 ounces by weight) 100% whole grain flour (I prefer to use Spelt flour which you can buy at a health food store)
- 1/2 cup (2 1/2 ounces by weight) whole flaxseeds (crushed in a blender)
- 2 tablespoons gluten flour
- 3 tablespoons powdered whey (may also use skim milk powder)
- 1 1/2 teaspoons salt
- 2 teaspoons active dry yeast (I used the kind for bread machines)
- Put all ingredients in the pan in the order listed, or in the reverse order if the manual for your machine specifies dry ingredients first and liquids last.
- Select Basic Wheat cycle, Light setting (or the equivalent setting for your machine).
- Press Start and in about 3 1/2 to 4 hours you'll have a delicious loaf of whole grain bread.
- Makes one 1 1/2 pound loaf.
