Skillet Spinach
- 1 lb. fresh, raw spinach
- 1 Tbsp. bacon grease
- 1 c. cooked pork or ham, chopped (optional)
- 1 tsp. vinegar
- 1 egg, beaten
- 1/2 c. half and half
- 1 scallion, chopped
- salt and freshly ground black pepper to taste
- Rinse spinach thoroughly and trim stems.
- If leaves are very large, tear in half.
- Shake to dry.
- In a very large skillet, heat bacon grease on medium-high heat, then add pork or ham and brown slightly.
- Turn heat to low and add vinegar.
- Mix egg with half and half and stir into skillet.
- Add spinach, a skilletful at a time, letting it cook down while stirring until more can be added. Continue until all the spinach is used.
- Sprinkle scallion over top and stir until last batch of spinach is wilted.
- Salt and pepper to taste and serve immediately.
- Makes 4 servings.
