Chili Beans
- 2 lb. lean ground beef
- 5 large potatoes, peeled and cubed
- 4 carrots, sliced
- 1 sweet pepper, diced
- 1 medium onion, diced
- 1 (17 oz.) corn, drained
- 1 (16 oz.) pork and beans
- 1 (14 oz.) pinto beans, drained
- 1 (26 oz.) kidney beans, drained
- 1 (4 oz.) mushrooms, drained
- 1 (28 oz.) crushed tomato
- 1 (28 oz.) tomato puree
- 1 c. water
- 2 tsp. oregano
- 3 Tbsp. chili powder
- 1 tsp. garlic salt
- 1 tsp. crushed red pepper
- Brown beef and drain off excess fat.
- Precook potatoes and carrots about 5 to 10 minutes.
- Put beef in a large, heavy pot; add water and drained vegetables, green pepper and onion. Sprinkle in seasonings and stir to blend.
- Simmer over low heat 2 to 2 1/2 hours.
- Serves 12.
