Flourless Apple Macadamia Cookies

  1. 1. Preheat oven to 370u0b0F. Prepare a cookie sheet with a liner and grease with cooking spray.
  2. 2. Grind the macadamia nuts until you have a fine powder texture.
  3. 3. In a microwave bowl, melt the white chocolate chips. This will take 2-3 minutes, stirring in every 1 minute. Make sure to not to overdo it as it may burn. Set it aside.
  4. 4. Peel the apple, remove the core part and finely chop.
  5. 5. In a mixing bowl, combine ground macadamia nuts, apples, baking powder, and salt. Mix well.
  6. 6. In another bowl, combine eggs and vanilla extract. Mix well.
  7. 7. Pour the wet ingredients into the dry ingredients and mix until combined.
  8. 8. Add the melted white chocolate chips into the batter and mix well with a spoon.
  9. 9. Pour spoonfuls of batter onto the cookie sheet. (One batch makes about 15-16 cookies.)
  10. 10. Put it in the middle rack of the oven and bake for 15 minutes or until light golden brown.
