Bacon Roasted Squash

  1. Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper for easy cleanup. You can leave this step out if you wish.
  2. Carefully cut squash into 8 even-sized wedges.Scrape the seeds and membrane from squash pieces using a teaspoon or grapefruit spoon. Lay the squash pieces on the baking sheet, cut side up. Season with salt and pepper.
  3. In a small bowl mix together bacon, garlic, rosemary and maple syrup. Divide bacon mixture among squash pieces.
  4. Bake for 35-45 minutes or until bacon is brown and squash is tender. Enjoy!
