Bacon Roasted Squash
- 1 whole Carnival Or Acorn Squash
- 1 pinch Salt And Pepper
- 2 cloves Garlic, Chopped
- 4 slices Bacon, Chopped Into Small Pieces
- 3/4 teaspoons Chopped Fresh Rosemary
- 1 teaspoon Maple Syrup
- Preheat oven to 350 F. Line a rimmed baking sheet with parchment paper for easy cleanup. You can leave this step out if you wish.
- Carefully cut squash into 8 even-sized wedges.Scrape the seeds and membrane from squash pieces using a teaspoon or grapefruit spoon. Lay the squash pieces on the baking sheet, cut side up. Season with salt and pepper.
- In a small bowl mix together bacon, garlic, rosemary and maple syrup. Divide bacon mixture among squash pieces.
- Bake for 35-45 minutes or until bacon is brown and squash is tender. Enjoy!
- Finally a squash recipe I enjoy! The salty bacon and savoury garlic and rosemary are perfect complements to the sweet squash. A delicious side dish with roasted meat, or a great lunch dish on a bed of dark greens with a maple vinaigrette.
