Grandpa Tim’S Molasses Cookies
- 1 cup Butter
- 1/2 cups Sugar
- 1/2 cups Brown Sugar
- 1/2 cups Dark Molasses
- 2 whole Eggs
- 1 teaspoon Cinnamon
- 1 teaspoon Vanilla
- 2 cups Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 3 cups Oatmeal
- 1/2 cups Coconut
- 11 ounces, weight Butterscotch Chips
- Cream together butter, sugar, brown sugar, molasses, eggs, cinnamon, and vanilla.
- Mix the flour, baking soda, and salt and add gradually until combined.
- Add the oatmeal, one cup at a time until combined, then add the coconut and butterscotch chips.
- Drop by spoonfuls on a well-greased baking sheet.
- Bake at 375 degrees for 15 minutes, but check them a little early. Cookies are done when just set. Remove to cooling racks right away.
