Jambalaya(Dirty Rice)

  1. Cook rice in 4 cups water.
  2. Set aside.
  3. Peel and cut up eggplant.
  4. Put eggplant, onions, bell pepper and celery in large pot and smother down with 3 tablespoons oil until almost a paste. Cook hamburger, pork chop, ham and chicken breast in pan; add tomatoes and cook for about 20 minutes.
  5. Add rice, meat mixture and seasonings to eggplant mixture.
  6. Let set for about 15 minutes and serve.
