Spicy Soba With Nectarines
- FOR THE SALAD:
- 3 whole Boneless, Skinless Chicken Breasts
- 1 bag (8 Oz. Size) Soba Noodles
- 1 Tablespoon Sesame Oil
- 1 head White Cabbage (savoy), Cored And Finely Chopped
- 1-1/2 cup Shredded Carrots
- 1 whole Cucumber, Cut Into Matchsticks
- 2 Nectarines, Chopped
- 1/2 cups Cilantro, Chopped
- 1/2 cups Scallions, Green And White Parts Diced
- FOR THE DRESSING:
- 2 cloves Garlic, Minced
- 2 Thai Chile, Finely Minced
- 1 teaspoon Ginger (freshly Grated)
- 2 Tablespoons Soy Sauce
- 2 Tablespoons Apple Cider Vinegar
- 1 teaspoon Agave Or Honey
- 1 Lime, Juiced
- 1 Tablespoon Sesame Oil
- 1/4 cups Almond Butter
- 1/4 cups Water
- 1. Preheat oven to 350 F. Put chicken into a baking dish. Bake chicken breast for 20 minutes or until cooked through. Remove from oven, allow it to cool and shred.
- 2. Boil a pot of water. Cook soba noodles as directed on the package. Drain and toss with a drizzle of sesame oil. Set aside.
- 3. While chicken is baking: prep cabbage, carrots, cucumber, nectarines, cilantro, and scallions and place them in a large bowl. Refrigerate until everything is ready.
- 3. Place garlic and chile peppers in a medium sized bowl. Combine remainder of dressing ingredients in the same bowl and whisk until smooth. You may find that this is more dressing than needed.
- 4. Combine soba noodles with veggies and chicken and mix until incorporated. Dress salad individually before serving.
