Spicy Tropical Radish Salad
- FOR THE DRESSING:
- 2 Tablespoons Lime Juice
- 1 Tablespoon Honey
- 1/4 teaspoons Dry Ginger
- 1/8 teaspoons Salt
- 1/8 teaspoons Cayenne Pepper (or Less To Taste)
- FOR THE SALAD:
- 1 cup Daikon Radish, Cut Into Matchsticks (Red Radish Works)
- 1 cup Cucumbers, Sliced And Halved
- 1 cup Mango, Cubed
- 1/2 cups Pomegranate
- 1/4 cups Fresh Cilantro For Garnish
- 2 teaspoons Lime Zest, For Garnish
- In a medium-sized mixing bowl, whisk together dressing ingredients and set aside.
- Prep salad ingredients, then stir together with dressing. Allow salad to sit for 15-30 minutes before serving. Garnish with fresh cilantro and lime zest.
- Note: This recipe pairs well with white fish or chicken.
