Mini Victorian-Era Applesauce Cake
- 1 cup Plain Flour
- 3/4 teaspoons Baking Soda
- 1 Tablespoon Unsweetened Cocoa
- 1/4 teaspoons Salt
- 3/4 teaspoons Cinnamon
- 1/8 teaspoons Ground Cloves
- 1/8 teaspoons Ground Nutmeg
- 1/8 teaspoons Allspice
- 3/4 cups Brown Sugar
- 3/4 cups Apple Sauce
- 1/4 cups Vegetable Shortening
- 1 whole Egg
- 1/2 cups Chopped Dates
- 1/4 cups Currants
- 1/4 cups Chopped Pecans
- 1. Preheat oven to 180u0b0 C. Grease and flour two 10cm round mini spring form, non-stick cake tins.
- 2. Sift flour, baking soda, cocoa, salt and spices straight into the bowl of a stand mixer. Add brown sugar and mix to combine. Add apple sauce and shortening and mix until well combined. Add egg and mix further until combined.
- 3. Empty into a large bowl and fold in dried fruit and nuts. Evenly divide the batter between the prepared pans. Bake for 30-35 minutes, until a toothpick inserted in the centre comes out clean.
