Southern Coca Cola Cake
- FOR THE CAKE:
- 2 cups Sugar
- 2 cups Plain White Flour
- 1/2 teaspoons Salt
- 1 cup Coca Cola
- 1 stick Butter - No Substitutions
- 1/2 cups Vegetable Oil
- 1/2 cups Cocoa
- 2 whole Eggs, Beaten
- 1/2 cups Buttermilk
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla

- FOR FROSTING:
- 1 stick Butter
- 1/2 cups Cocoa
- 6 Tablespoons Whole Milk Or Cream
- 1 teaspoon Vanilla
- 1 pound Powdered Sugar
- 1 cup Pecans Or Walnuts (optional)
- In large bowl mix sugar, flour, and salt. Set aside.
- In medium sauce pan add the cup of Cola, stick of butter, vegetable oil, and 1/2 cup cocoa. Bring liquid mixture to a rolling boil and mix well. Turn off heat then add the flour mixture. Mix well, then add the beaten eggs, buttermilk, baking soda, and vanilla. Pour batter into a greased and floured sheet cake pan. Bake at 350 degrees for 20-25 minutes, or until a toothpick inserted in cake comes out clean.
- Frosting:
- In a saucepan add the other stick of butter, 1/2 cup cocoa, and milk or cream. Heat mixture until butter melts. Mix well and add the vanilla, powdered sugar, and the nuts. Pour frosting over cake while cake is still warm.
- Serve with ice cream!
