Hawaiian Wedding Cake
- 1 can (20 Oz Can) Crushed Pineapple (with Juice)
- 2 cups All-purpose Flour
- 1 teaspoon Soda
- 2 cups Sugar
- 3 whole Extra Large Eggs
- 1 stick Butter
- 8 ounces, weight Cream Cheese
- 1 teaspoon Vanilla
- 3 cups Powdered Sugar
- 1/2 cups Chopped Pecans, Or More As Needed
- Caramel Ice Cream Topping, To Drizzle On Top
- Preheat oven to 350 degrees.
- Beat eggs well and add sugar. Add soda to flour. Mix pineapple into the flour mixture and then add this into the egg and sugar mixture. Mix until all ingredients are incorporated. Pour into a 9x13 ungreased pan. Bake for 40 minutes.
- Beat butter, cream cheese, vanilla and powdered sugar with an electric mixer to make the frosting. Add milk if needed or powdered sugar for desired thickness.
- Frost cake and cut into 18 piece (3x6), or cut larger pieces if you like. Place one piece of cake on a serving plate and sprinkle with extra chopped pecans. Drizzle with caramel ice cream topping.
