Crockpot Winter Vegetable Minestrone
- 1 whole Onion, Chopped
- 1 whole Zucchini, Chopped
- 4 whole Carrots, Chopped
- 1 cup Green Beans, Chopped
- 4 stalks Celery, Chopped
- 3 cloves Garlic, Minced
- 1 teaspoon Rosemary
- 2 teaspoons Oregano
- 5 whole Small Gold Potatoes, Chopped
- 1 can (15 Oz. Size) Chopped Tomatoes
- 4 cups Vegetable Broth
- 2 cups Kale, Chopped And Rinsed
- 1 can (15 Oz. Size) Cannellini Beans, Drained
- 2 cups Elbow Noodles
- Since this is a slow cooker recipe and the last thing I want to do at 6:00AM is chop veggies, I prep absolutely everything the night before. On my way out the door I simply throw everything in the crockpot.
- Combine all ingredients except kale, beans and noodles in slow cooker. Set to high for four hours or low for seven hours. Then add kale, cannellini beans and noodles. Cook for another 30 minutes on high. Enjoy!
