Simple And Healthy Roast Yam Recipe
- 1/4 teaspoons Turmeric Powder
- 7 ounces, weight Yam, Sliced Into Big Pieces;
- 1 Tablespoon Coconut Oil
- 1/2 teaspoons Mustard Seeds
- 1 Tablespoon Urad Dal Or Black Lentils (optional)
- 1/2 teaspoons Cumin Seeds
- 1 pinch Asafetida Or Hing
- 2 sprigs Curry Leaves
- 1 Green Chili, Chopped
- 1 teaspoon Fresh Ginger, Grated Or Finely Chopped
- 1 teaspoon Garam Masala
- 1/2 teaspoons Salt Or As Per Taste
- 1 sprig Coriander (Cilantro) Leaves, For Garnish
- In a pan, boil enough water to submerge the yams and add turmeric powder, salt and sliced yams. Cook yams until soft, about 10 minutes. Drain the water and set cooked yams aside.
- In a frying pan over medium heat, add coconut oil. Add mustard seeds, urad dal and cumin seeds. Stir fry until lentils change color to yellow-brown. Add hing, curry leaves, green chilli and fresh ginger. Fry for about 1 minute, then add cooked yams, garam masala and salt. Mix well and fry for few more minutes.
- Garnish with fresh coriander leaves and serve as a side dish for grill meat or as a main vegetable dish.
