Spinach And Tortellini Salad
- 2 cups Tortellini
- 1 bag (6 Oz. Size) Fresh Baby Spinach
- 1/3 whole Red Onion
- 1 jar (12 Oz. Jar) Marinated Artichoke Hearts
- 3/4 cups Sun-dried Tomatoes, Julienned
- 1/4 cups Vinaigrette
- Bring a pot of water to a boil. Add the tortellini and cook for 5 minutes or until al dente. Drain the tortellini and rinse thoroughly with cold water. Set aside.
- Prepare your veggies:
- 1. Roughly chop the spinach.
- 2. Thinly slice the onion.
- 3. Drain and chop the artichoke hearts.
- 4. Slice the sun-dried tomatoes (or buy them pre-sliced!)
- Combine the spinach, onion, artichoke hearts, and sun-dried tomatoes in a large bowl. Add the tortellini. Drizzle the vinaigrette on the salad and toss to combine. Serve and enjoy!
- Note: I bought my vinaigrette from the store but you could make your own if you feel so inclined.
