Spinach And Tortellini Salad

  1. Bring a pot of water to a boil. Add the tortellini and cook for 5 minutes or until al dente. Drain the tortellini and rinse thoroughly with cold water. Set aside.
  2. Prepare your veggies:
  3. 1. Roughly chop the spinach.
  4. 2. Thinly slice the onion.
  5. 3. Drain and chop the artichoke hearts.
  6. 4. Slice the sun-dried tomatoes (or buy them pre-sliced!)
  7. Combine the spinach, onion, artichoke hearts, and sun-dried tomatoes in a large bowl. Add the tortellini. Drizzle the vinaigrette on the salad and toss to combine. Serve and enjoy!
  8. Note: I bought my vinaigrette from the store but you could make your own if you feel so inclined.
