Eggplant Dressing
- 1 lb. lean ground chuck
- 1 large eggplant, peeled and cubed
- 1 small bell pepper, chopped
- 1 medium onion, chopped
- 2 ribs celery, chopped
- 2 c. long grain rice
- salt, black pepper and red pepper (optional) to taste
- Cook
- rice according to directions.
- Brown ground meat. Add bell pepper, celery and onion and saute.
- Season to taste. Lower heat,
- cover
- and
- cook
- vegetables
- until tender.
- Add eggplant. Cover
- and cook until tender and flavors are blended.
- Add
- 1/2 cup
- water
- and adjust seasoning.
- Simmer a few more
- minutes. Remove
- from
- heat.
- Gradually
- add hot cooked rice
- until
- right consistency, not too moist and not too dry. (May have
- some rice left over.) Can be made ahead and reheated.
