Eggplant Dressing

  1. Cook
  2. rice according to directions.
  3. Brown ground meat. Add bell pepper, celery and onion and saute.
  4. Season to taste. Lower heat,
  5. cover
  6. and
  7. cook
  8. vegetables
  9. until tender.
  10. Add eggplant. Cover
  11. and cook until tender and flavors are blended.
  12. Add
  13. 1/2 cup
  14. water
  15. and adjust seasoning.
  16. Simmer a few more
  17. minutes. Remove
  18. from
  19. heat.
  20. Gradually
  21. add hot cooked rice
  22. until
  23. right consistency, not too moist and not too dry. (May have
  24. some rice left over.) Can be made ahead and reheated.

lean ground chuck, eggplant, bell pepper, onion, celery, long grain rice, salt
