“Loco” Marinade
- 6 ounces, fluid Pineapple Juice
- 2 Tablespoons Lime Juice
- 1 Tablespoon White Vinegar
- 2 cloves Garlic, Minced
- 1/2 teaspoons Salt
- 1/2 teaspoons Dried Oregano
- 1/4 Tablespoons Mild Chili Pepper, Finely Minced
- 1/8 teaspoons Ground Black Pepper
- 1 Tablespoon Vegetable Oil
- 8 drops Yellow Food Coloring (optional)
- 1 pound Chicken Pieces
- Combine all ingredients, reserving 1/4 cup for basting.
- Place chicken in a shallow glass dish, cover with marinade. Cover with a lid/plastic wrap and refrigerate overnight, turning once.
- Remove chicken from the fridge 45 minutes before cooking. Drain chicken and grill, basting the last few minutes before removing from the grill.
