Three Cheese Chicken Bake
- 8 oz. lasagna noodles
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 3 Tbsp. butter or margarine
- 2 c. chopped, cooked chicken
- 1 1/2 c. shredded American cheese
- 1 (10 3/4 oz.) can condensed cream of chicken soup
- 1 (4 oz.) jar or can sliced mushrooms, drained
- 1/2 c. chopped pimento
- 1/3 c. skim milk
- 1 1/2 c. cream-style cottage cheese
- 1/2 c. grated Parmesan cheese
- Cook lasagna noodles.
- Cook onion and green pepper in butter until tender.
- Stir in soup, pimento, mushrooms and milk.
- Layer 1/2 of the noodles in 13 x 9 x 2-inch pan or glass dish; top with 1/2 of the cottage cheese, 1/2 of the soup mixture, 1/2 of chicken and 1/2 of American cheese.
- Repeat the layers.
- Bake in 350u0b0 oven for 45 minutes.
- Then top with remaining American cheese and Parmesan.
- Bake 2 minutes more and eat!
