Southern Cheesy Biscuits
- 2-1/2 cups Flour
- 2 Tablespoons Baking Powder
- 1 teaspoon Salt
- 1/2 teaspoons Baking Soda
- 1 teaspoon Dry Mustard
- 1/4 teaspoons Cayenne Pepper
- 1/2 cups Plus 2 Tablespoons Butter-flavored Shortening
- 1 cup Grated Cheddar Cheese
- 1-1/4 cup Buttermilk
- Preheat oven to 400 F.
- In a large bowl mix together the dry ingredients with a whisk. Blend in shortening using your hands until the mixture looks like cornmeal. Add grated cheese. Make a well in the center and add 1 cup of the buttermilk. Mix as little a possible, just until the mix is a little sticky. Add a bit more milk as necessary to hold everything together.
- On a silicone baking mat, form dough into a circle and press it out to about 3/4 inch thick. Cut out biscuits using your preferred size/shape cutter.
- Bake biscuits on a parchment paper- or silicone mat-lined cookie sheet at 400 F for 12 minutes.
