Southern Cheesy Biscuits

  1. Preheat oven to 400 F.
  2. In a large bowl mix together the dry ingredients with a whisk. Blend in shortening using your hands until the mixture looks like cornmeal. Add grated cheese. Make a well in the center and add 1 cup of the buttermilk. Mix as little a possible, just until the mix is a little sticky. Add a bit more milk as necessary to hold everything together.
  3. On a silicone baking mat, form dough into a circle and press it out to about 3/4 inch thick. Cut out biscuits using your preferred size/shape cutter.
  4. Bake biscuits on a parchment paper- or silicone mat-lined cookie sheet at 400 F for 12 minutes.
