Banana Hazelnut Cookies

  1. Preheat oven to 370u0b0F. Line and lightly grease a cookie sheet.
  2. Combine hazelnut meal, baking powder, and salt in a mixing bowl.
  3. In separate bowl, combine bananas, honey and vanilla extract. Mash with a fork or hand. I prefer
  4. mashing bananas with hand to make sure they are properly mashed.
  5. Mix banana mixture into the dry ingredients and barely combine with a spoon. Add beaten eggs to batter and mix well with spoon.
  6. Pour spoonfuls of batter onto cookie sheet, making about 20 cookies for the sheet. Bake for 20 minutes or until an inserted toothpick comes out clean.
  7. Let cool for a while and serve with your favorite beverage.
