Banana Hazelnut Cookies
- 2 cups Hazelnut Meal
- 2 teaspoons Baking Powder
- 1/4 teaspoons Salt
- 2 whole Overipe Bananas
- 1/4 cups Honey
- 1/2 Tablespoons Vanilla Extract
- 2 whole Eggs, Beaten
- Preheat oven to 370u0b0F. Line and lightly grease a cookie sheet.
- Combine hazelnut meal, baking powder, and salt in a mixing bowl.
- In separate bowl, combine bananas, honey and vanilla extract. Mash with a fork or hand. I prefer
- mashing bananas with hand to make sure they are properly mashed.
- Mix banana mixture into the dry ingredients and barely combine with a spoon. Add beaten eggs to batter and mix well with spoon.
- Pour spoonfuls of batter onto cookie sheet, making about 20 cookies for the sheet. Bake for 20 minutes or until an inserted toothpick comes out clean.
- Let cool for a while and serve with your favorite beverage.
