Poha (Rice Flakes) With Potatoes, Onions And Spices
- Oil, As Needed For Cooking
- 2 cups Poha Or Rice Flakes
- Salt To Taste
- 1 pinch Turmeric Powder
- 1 teaspoon Black Mustard Seeds
- Fresh Curry Leaves (optional)
- 2 Onions, Sliced Into Long Thin Strips
- 2 Potatoes, Cubed Small
- 1 Green Chili Or Jalapeno, Cut Small
- Lemon Or Lime Juice
- Coriander (cilantro) Leaves, For Garnish (optional)
- Roasted Peanuts (optional)
- Take a frying pan, heat oil, and add potatoes. Fry until golden brown. Once done, set aside on paper towels to absorb the excess oil.
- Meantime, using a strainer, rinse poha in clean running water until it softens. Add some salt and turmeric powder and mix gently with your hands.
- In the same frying pan, heat more oil and add mustard seeds. Once they start sizzle, add a few curry leaves, onions and green chili or jalapeno. Stir fry until onion softens.
- Add potatoes, mix and fry for 1 minute. Add poha, mix well and saute for 2 minutes over low heat. Squeeze some lemon or lime juice and turn off heat.
- Garnish with fresh coriander leaves and/or roasted peanuts and serve warm.
