Decadent Chocolate-Cherry Cake

  1. Prepare cake according to package directions, adding cocoa powder to dry ingredients.
  2. While cake cools, prepare pudding mix according to package directions, using skim milk; cool.
  3. Set aside 12 cherries for decoration.
  4. Coarsely chop remaining cherries. Stir chopped cherries into cooled pudding; set aside.
  5. Cut 1-inch slice off top of cooled cake; set slice aside.
  6. Cut through 1 1/2 inches wide and 1 inch deep around top of cake; pull out and discard cake in trough.
  7. Spoon pudding into trough; replace top of cake.
  8. Sprinkle top of cake with confectioners sugar.
