St. Patrick’S Day Green Cupcakes

  1. 1. Preheat oven to 350u0b0F.
  2. 2. Combine all the dry ingredients in a large bowl.
  3. 3. Puree the applesauce and spinach in a blender. You may need to add the spinach in batches.
  4. 4. Using a hand mixer, blend the spinach mixture and vanilla into the flour mixture for 2 minutes. Divide evenly into 18 cupcake liners (in a cupcake pan, of course).
  5. 5. Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  6. 6. Cool completely before frosting.
