St. Patrick’S Day: Rainbow Cupcakes
- 1 box (18.25 Oz. Box) White Cake Mix
- 3 Eggs
- 1/3 cups Oil
- 1 cup Water
- 1 container (12 Oz. Size) Vanilla Frosting
- Red, Blue, Green Food Coloring, As Desired
- Green Decorator Sugar, If Desired
- Preheat oven to 350 F. Line two cupcake pan(s) with paper liners (recipe should make about 18).
- Prepare cake batter as directed on the box, adding eggs, oil and water into the bowl with the cake mix. Blend on low for 30-60 seconds. Then beat batter on medium for 1-2 minutes.
- Separate batter evenly into four small bowls. Using food coloring, tint batter in 3 of the bowls, making each a different color. Leave one bowl with the plain batter.
- Spoon the batter into cupcake liners, alternating colors. I find they look best when you finish with the standard un-tinted cupcake batter on top.
- Bake 15-18 minutes on 350 F. Let the cupcakes cool before frosting them.
- Once cupcakes are cool, prepare the green icing. Add 4-5 drops of green coloring into the vanilla icing and mix well. Add additional green drops until you reach your desired shade of green.
- Frost cupcakes. I rolled the cupcake edges in green decorator sugar to fancy them up.
