Stacked Apple Salad
- FOR THE SALAD:
- 2 whole Granny Smith Apples, Cored And Thinly Sliced
- 1/2 cups Water
- 1 whole Lemon, Juiced
- 12 whole Radishes, Thinly Sliced
- 1/2 cups Goat Cheese Crumbled
- 1 cup Fresh Parsley
- FOR THE VINAIGRETTE:
- 1 teaspoon Dijon Mustard
- 1 Tablespoon White Wine Vinegar
- 1/4 cups Olive Oil
- 1 pinch Salt
- 1 pinch Cracked Pepper
- Using a large bowl, add the water and juice of 1 lemon. Place the apple slices in the water immediately in order to avoid oxidation.
- Make the vinaigrette by whisking together the mustard, white wine vinegar and olive oil.
- Remove the apples from the lemon water. Pull out your serving plates and stack the apples with some radishes, goat cheese and parsley between each layer and then garnish with parsley leaves. Season with salt and pepper and drizzle the vinaigrette on top.
