Chicken Yucatan*
- 8 chicken breast halves
- chili powder (sprinkled thickly)
- curry powder (sprinkled thickly)
- 1 large onion (chopped)
- 1 large green pepper
- 3 stalks celery (chopped)
- salt and pepper to taste
- 2 large tomatoes (chopped or large can)
- 1 qt. orange juice
- Season
- chicken
- breasts
- with spices.
- Line a flat pan with aluminum
- foil.
- Place chicken in pan, distribute onion, celery, tomatoes
- and
- pepper
- over
- chicken.
- Pour in orange juice and marinate several hours.
- It's convenient to do this in
- the morning
- and
- forget until mid-afternoon.
- Cover with foil and bake
- at 300u0b0 for 4 hours.
- Serve over saffron rice. Slow, long cooking very important.
- Serves 8.
