Mediterranean Chicken And Orzo Salad
- 1 Tablespoon Dijon Mustard
- 1/4 cups Red Wine Vinegar
- 3/4 teaspoons Salt
- 1/4 teaspoons Black Pepper
- 3/4 cups Olive Oil
- 1/2 teaspoons Dried Italian Seasoning
- 1 pound Orzo, Cooked
- 1 cup Grape Tomatoes, Halved
- 2 cups Black Olives, Coarsely Chopped
- 1/4 pounds Feta Cheese, Crumbled
- 2 packages Italian Syle Pre-cooked Chicken, Bite Size (5 Oz Each)
- 2 Tablespoons Chopped Parsley
- Make the dressing:
- Whisk together mustard, vinegar, salt, and pepper. Add olive oil and Italian seasoning slowly after others are blended. Cover and refrigerate until needed.
- Make the pasta:
- Mix together all the other ingredients.
- Pour on 3/4 cup of dressing. Fold together GENTLY then drizzle on the remaining dressing.
- Serve.
