Low Carb Keto Banana Bread
- 3 cups Almond Flour (300g)
- 4 Tablespoons Coconut Flour (32g)
- 1 Tablespoon Baking Powder
- 1-1/2 teaspoon Cinnamon
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 2/3 cups Monkfruit Sweetener
- 7 Tablespoons Coconut Oil
- 6 Tablespoons Unsweetened Almond Milk
- 4 Large Eggs, At Room Temperature
- 4-1/2 teaspoons Banana Extract
- Preheat oven to 350u0b0F and line the bottom of an 8-inch loaf pan with parchment paper, rubbing the sides with coconut oil.
- In a medium bowl, whisk almond flour, coconut flour, baking powder, cinnamon, baking soda and salt.
- In a separate large bowl, whisk all remaining ingredients until well combined. Stir flour mixture into wet ingredients until well-mixed. Let stand for 10 minutes for the coconut flour to start absorbing the moisture.
- Pour into the prepared pan and bake until a toothpick inserted in the center comes out clean, about 50 minutes to 1 hour. Let cool in the pan for 1 hour. Gently remove to a cutting board, slice and devour!

- As always, please weigh your flours to ensure results.
- Slice this when it's still a bit warm! It gets a harder crust when it's completely cool and is harder to cut.
