Lime Fruit Salad(8 Servings)
- 2 (3 oz. each) pkg. lime gelatin
- 2 c. boiling water
- 1 1/2 c. boiling water
- 2 small apples, pared, cored and sliced
- 1/2 c. chopped celery
- 1/2 c. chopped, pared apple
- 1/2 c. chopped mixed dried fruit
- 1/2 c. chopped dates
- 1/2 c. dark raisins
- 1/8 tsp. ground nutmeg
- 1/8 tsp. ground mace
- 1/8 tsp. ground cinnamon
- Dissolve gelatin in boiling water in medium bowl; stir in cold water.
- Pour 1/2 cup gelatin mixture into bottom of 6 cup ring mold; refrigerate until set, but not firm, about 30 minutes. Arrange apple slices on gelatin; pour 1 cup gelatin over apples. Refrigerate until set, but not firm, about 45 minutes.
- Refrigerate remaining gelatin until the consistency of unbeaten egg whites, about 45 minutes.
- Stir in remaining ingredients; spoon into mold. Refrigerate until firm, about 3 hours.
- Loosen edge of mold with tip of knife; dip mold briefly in warm water.
- Unmold on serving platter; refrigerate until serving time.
