Healthy Orange Chia Cake
- FOR THE CAKE:
- 2 Tablespoons Chia Seeds
- 1 cup Water
- 1 cup Buckwheat Flour
- 1/2 cups Ground Almonds
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla Powder
- 1 teaspoon Salt
- 2 Tablespoons Unsweetened Applesauce
- 1/3 cups Clear Honey
- 1 whole Large Orange, Zest And Juice
- 1 Tablespoon Coconut Oil, Melted
- FOR THE FROSTING:
- 1 Tablespoon Cacao Powder
- 1 Tablespoon Maple Syrup
- 1 Tablespoon Coconut Oil, Melted
- Soak the chia seeds in the water for 10 minutes.
- Preheat oven to 180 C/355 F.
- In a medium sized bowl mix together all of the dry ingredients (flour through salt).
- Whisk together the chia seed mixture, unsweetened applesauce, honey, orange zest, orange juice and coconut oil in a separate larger bowl.
- Gradually stir the dry ingredients into the wet. Make sure you mix everything together really well. I used a whisk.
- Pour the batter into a greased 20x20 cm baking dish and bake the cake for 20 minutes. When done, the cake should feel firm and a toothpick should come out clean when inserted in the center.
- To make the chocolate frosting, combine all of the ingredients together in a bowl and mix. Pour over the cake when it is cooled down.
