Oatmeal Bread

  1. In large bowl, pour boiling water over oats; let stand 1/2 hour.
  2. Dissolve yeast in warm water; let stand 5 minutes.
  3. Stir salt, molasses or honey and butter into oats.
  4. Stir in yeast. Gradually stir in 4 cups flour.
  5. Knead in remaining 2 cups flour (dough still in bowl).
  6. Shape dough in mound in center of bowl; cover with clean cloth.
  7. Let rise in warm place until doubled, 2 to 3 hours.
  8. Cut down with knife 6 or 7 times.
  9. Divide dough in half; place each in well-greased 9 x 5 x 3-inch pan, pulling dough to cover bottom of pan.
  10. Cover; let rise in warm place until doubled 1 to 2 hours.
  11. Bake at 325u0b0 for 50 minutes or until loaf sounds hollow when thumped.
  12. Makes 2 loaves.
