Strawbana Muffins
- 1-1/2 cup Chopped Strawberries
- 1/2 cups Sugar, Plus A Spoonful
- 2 cups Flour
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 3 whole Overripe Bananas, Mashed
- 2 whole Eggs
- 1 stick Butter, Melted
- 1/4 cups Milk
- 2 teaspoons Vanilla Extract
- Preheat oven to 375 degrees. Mix the chopped berries with the spoonful of sugar and set aside.
- In a small bowl, mix flour, baking powder, baking soda and salt.
- In a larger bowl, mix the rest of the ingredients, then add the strawberries (although be careful not to add any of the juice that they may produce) and combine.
- Add the dry ingredients to the wet ingredients and mix well.
- Fill muffin cups (either with paper liners or without) 2/3 full.
- Bake about 15 minutes, or until toothpick inserted into the middle of a muffin (and not directly into a strawberry!) comes out barely dry.
