Blueberry Steak Salad With Homemade Blueberry Dressing
- FOR THE SALAD:
- 12 ounces, weight Lean Sirloin Steak
- 1 teaspoon Extra Virgin Olive Oil
- 4 cups Dole 50/50 Spring Mix And Baby Spinach
- 1/4 cups Walnuts, Roughly Chopped
- 1/4 cups Crumbled Goat Cheese
- Black Pepper To Taste
- FOR THE DRESSING:
- 1 cup Blueberries, Divided
- 1/2 teaspoons Sugar
- 1/4 cups Balsamic Vinegar
- 1/4 cups Extra Virgin Olive Oil
- Salt And Pepper, to taste
- Heat grill to medium. Rub steak with the olive oil and sprinkle with pepper.
- Place steak on grill and cook each side for 6 minutes for medium cooked. Once cooked, take the steak off the grill, set it on a plate and cover with aluminium foil. Let the steak rest for 5 minutes. Slice against the grain into thin strips.
- For the dressing: In a blender or food processor, add half of the blueberries, sugar and balsamic dressing; process until combined. With the food processor on, slowly add the olive oil. Taste it to see if you need to add a dash of salt and pepper.
- Between 4 plates, evenly divide the salad greens, cooked steak strips, walnuts, remaining blueberries and goat cheese. Pour dressing over the top
