Italian Orange Cake
- FOR THE CAKE:
- 1/2 cups Butter
- 2 Eggs
- 1/2 cups Superfine Sugar
- 1 cup Confectioners Sugar
- 1 cup All-purpose Flour
- 1/4 teaspoons Baking Powder
- 1/3 cups Orange Juice
- 1/4 teaspoons Salt
- FOR THE ORANGE FROSTING:
- 1/4 cups Orange Juice
- 1 cup Confectioners Sugar
- Preheat oven to 350u0b0F. Line an 8" cake pan with parchment paper and grease pan and paper with butter.
- Melt butter in microwave. Whisk eggs, superfine sugar, and confectioners sugar in a large bowl until light and fluffy. Stir in melted butter.
- Sift flour and baking powder into mixture, mix well and stir in orange juice. Pour mixture into cake pan and bake for 30-35 minutes.
- For the frosting, combine orange juice and confectioners sugar.
- Remove cake from oven and let cool in pan. After cake is cool, gently remove from pan and coat with frosting. Let sit until frosting has settled.
